Gastronomic Legacy

 


The richness of Spanish gastronomic heritage is due, in large part, to the variety of its regional cuisines, which are the reflection of different cultures, climates and landscapes, of diverse pantries and products that make up a delicious map.

The Royal Academy of Gastronomy, in its objective of preserving and disseminating Spanish cultural heritage, wants to pass on to new generations the most representative recipes of our cuisine.

After a period of investigation in collaboration with the Autonomous Academies of Gastronomy, Essential dishes of Spanish gastronomy that have been cooked and photographed for this project have been selected in the most faithful version possible to their origin.

With this, the Royal Academy of Gastronomy fulfills one of its founding purposes: to protect, recover and disseminate our Gastronomic Legacy.
