800 g potatoes
Extra virgin olive oil
6 eggs

Peel the potatoes, wash, dry and cut into thin slices. Heat plenty of oil in a deep frying pan and add the potatoes. Fry over medium heat until tender and lightly golden. Take out and drain.
Beat the eggs in a bowl, add the drained potatoes and season. Let it rest for at least 15 minutes.
Heat 1 tablespoon of oil in a frying pan and add the egg and potato mixture. Set the tortilla on one side, turn it over with a plate or a lid and let it set on the other side. The tortilla should be lightly golden on the outside and soft on the inside.
Note: you can make the potato omelette with finely chopped onion, frying it at the same time as the potatoes.
