Ingredients

150 g sugar
1 tablespoon of water

500 g sugar
200 g water
Yolks 10

Crafting
To caramelize the mold
Put the sugar and water in a saucepan over the heat. When it has a light golden color, pour it into the bottom of a mold.
For the bacon of heaven
In a saucepan, boil the water with the sugar, counting 5 minutes from when it starts to boil. Warm.
Lightly mix the yolks and whites. Add the syrup and pass the mixture through a sieve.
Pour into the caramelized mold and cook in a bain-marie with the lid wrapped in a cloth for about 20 minutes over low heat. Remove from heat, cool and unmold.
