100 g young green beans
100 g peas
250 g tomatoes
150 g potatoes
100 g ham
100 g chorizo
Extra virgin olive oil
1 small onion
6 eggs

Cut the green beans into small pieces. Cook with the peas in boiling salted water for 10 min. Pass through cold water and drain. Peel the tomatoes, remove the seeds and chop. Peel and cut the potatoes into cubes and cook in boiling water for 5 min. Drain. Cut the ham into strips and the chorizo into cubes.
In a little oil, sauté the peeled and finely chopped onion. When it begins to take color, add the ham and tomato. Let it reduce and add the green beans, peas, potatoes and chorizo. Season.
Divide the vegetables into individual ramekins, make a space and crack an egg into each one.
Cover the ramekins and put them in the oven preheated to 200ºC until the egg whites are set.
Serve in the same casseroles.
