6 portion gilthead bream

To cook the sea bream in salt, they are neither scaled nor opened to remove the viscera. Wash, drain and dry very well. In a baking dish, put a layer of salt.
Place the gilthead sea bream on top and cover completely with more salt. Put in the oven at 200ºC for 15-20 min (depending on weight).
Remove from the oven, break the salt crust and remove carefully so as not to break the skin. To serve, peel off the skin and remove the loins.
Serve with mayonnaise sauce.
Note: for the mayonnaise sauce, put 1 egg + 200 g oil in a blender glass and emulsify. Add salt and lemon juice to taste.
It can also be served with aioli instead of mayonnaise.
