Ingredients
1 head of garlic
1 sprig of oregano
1 sprig of thyme
1 sprig of parsley
1 teaspoon paprika sweet
200 g extra virgin olive oil
1 tablespoon of white wine vinegar
1 rabbit of 1k ¼

For the mojo
3 cloves of garlic
1 red pepper or red pepper
½ teaspoon cumin
1 teaspoon paprika sweet
50 g extra virgin olive oil
1 tablespoon of white wine vinegar

Crafting
Crush the peeled garlic cloves with the oregano, thyme, parsley, paprika and salt. Add half the oil and vinegar.
Clean the rabbit, cut into pieces and put in a container with the prepared marinade for 8 hours.
In a frying pan, heat the oil and fry the rabbit pieces. Reserve.
For the mojo
Mash the garlic cloves with the red pepper cut into small pieces, the cumin, the paprika and the salt. Dilute with oil and vinegar. Pour over the rabbit pieces and cook over medium heat for 10 minutes. Serve hot.
Note: red pepper is a very spicy variety of pepper used in Canarian cuisine, especially for making mojos.
