Ingredients
3 lobsters of 1 kilo each
1 l fish broth
4 onions
5 cloves of garlic
5 Italian green peppers
Extra virgin olive oil
1 Tomate
Parsley
1 teaspoon paprika sweet

For the bite
2 boiled egg yolks
4 cloves of garlic
50 g brandy

Crafting
Peel and chop the onions, peppers and garlic cloves. Put in a clay pot with a little oil. Cook over low heat for 20 min.
Add the grated tomato and chopped parsley. Season. Continue cooking for 10 more minutes. Add the paprika, stir and remove from the heat. Pour in the hot broth, blend and pass through the sieve.
Chop the lobsters and reserve the livers and coral. Place the lobsters in the boiling sauce and continue cooking for 5-8 minutes depending on the size.
For the bite
In the mortar, mash the lobster livers and coral, the egg yolks, the peeled garlic cloves, the brandy and the parsley. Two minutes before finishing cooking the lobsters, pour the mash into the clay pot. Remove from heat and set aside.
Accompany the stew with some slices of Mallorcan bread.
